To me, there is nothing better than Tahchin ,The filling may vary depending on taste and taste.Lamb, chicken or vegetables.It is so good even without filling and then I usually serve it with a little more delicious salad and olives.
Keep in mind that there is a difference between rice and rice for Tahchin, so save some of the batter and mix it in two batches for the right amount of liquid to get the right texture on the rice.
Tahchin for 4 persons:
rice:
4 dl rice
2 tbsp salt
1 chicken broth (can be excluded)
The following is easily whipped to a batter:
2 egg yolks
1 egg
3 dl Turkish yogurt
1 dl oil
50 g butter
1/2 cup lemon juice
0.5 g of saffron
Filling:
4-6 chicken fillets, 600_900
1 st carrot
1 onion
1 teaspoon turmeric
3 pcs
4 garlic cloves
1 glass of water
Salt and pepper
50 g butter (put on rice before you start cooking)
This is how you do it:
Rice should be rinsed and put in salted water for at least half an hour before cooking begins.
Boil well with water and pour into the rice and broth when the water starts to boil.
When the rice has cooked for about 5 minutes, the time may vary depending on the kind of rice you use (note not overcooked, important not to let the rice cook too long for this dish) you strain the rice and let the water run off properly.
The chicken is cooked with all herbs and spices, then you take the chicken and divide it into smaller parts
Mix the rice with the batter you made as above with saffron and stir gently.
Save some of the batter to mix it with the chicken
Pour 3 tablespoons of oil into a pan or form, preferably the kind that food does not stick to, like Teflon, pour the saffron yellow rice into the pan.
Pour half of the rice into the pan, place on the chicken and then pour the rest of the rice.
Slice the butter and put on the rice, Turn on medium heat for about half an hour, then lower the heat and leave the rice on for another quarter.
Feel free to decorate down barberry berries that are lightly milled in butter with a little sugar and saffron
Then just serve the rice.
The filling can easily be replaced with vegetarian alternatives, I myself prefer fried eggplant with barberry berries
